B-E-E-R. Until recently, the extent of my beer knowledge did not extend further than the fact that I could spell it. Beer, to me, seemed very simple. It was something I drank while watching the game; it definitely improved my golf performance and I’m fairly certain it has helped me catch more fish. However, here in North County San Diego, I seem to have been missing out on the more crafty side of the tasty beverage and that it’s entirely possible I can actually enjoy a beer even more than I’ve ever imagined.
The whisper of craft beer in San Diego has become louder and louder; so loud, in fact, that I decided it was time to stretch my legs, extend my taste buds and see what the fuss is all about. With an irresistible name to go along with its reputation for excellence, I found myself greeted at the door of Belching Beaver Brewery by one of it owners who proudly stated, “We are in the happiness business.” Well, Dave, I just so happen to be a happiness customer.
Belching Beaver has three locations in North County San Diego and as I walked into their brewery in Vista, all five senses were surprisingly awakened by its atmosphere. The huge stainless steel containers, undoubtedly filled with the brew I was about to experience, sent an immediate sense of freshness to my taste buds, but tasting the beer would wait. I had to see this place. It was warm and inviting, earthy and wooden with the perfect blend of chocolate and oak for its aroma. The bar itself seemed to reach out and hug me, urging me to sit down, relax my feet and taste a real beer for the first time.
Eager as I was to get started, I instead continued down the hallway and outside to what must be every beer lover’s paradise. The patio was massive with solid wood chairs surrounding beautiful stone fire pits. Strings of lights draped through the trees above me with the natural earth under my feet. There is a place in the corner for live music and I instantly envisioned my friends and family sitting around the fire laughing, creating memories over good food and good drink. I didn’t just want to sit there, I wanted to stay there and bring a tent to sleep in.
Back inside, my tour continued as Dave walked me through their plans for expansion, which involved an entire room for private events and weddings, along with their very own kitchen. Not only could I enjoy one of their beers brewed right here on-site, but soon patrons would be able to nosh on Belching Beaver burgers (which I’m sure will pair perfectly with the drink in hand). The brewery would soon grow from its current 3600 square feet of fun to 7000 square feet of a damn good time, and should I ever have a wedding of my own, I could most certainly picture it here. The rustic ambience, the warm lighting and the twinkling of glasses as we toast the night away. Just as I was pondering what sort of bribery it would take to have my honeymoon on the patio, Dave reminded me I had not yet even tasted their beer.
Giving in to the bar’s previous invitation, I sat down into her hardwood lap and stared at the chalkboard in front of me. Belching Beaver’s name provoked just as much curiosity as the wide variety of which to choose from. There were stouts and sours, IPA’s and ales all of which seemed to sound as blissful as their number one selling beer, The Peanut Butter Stout. The beertender, seeing the rookie he was dealing with, knowledgeably suggested a flight of four tasters and assured me I would discover my very own preference; one that would forever alter any future fishing expeditions.

After enjoying the plethora of brews, and after checking my purse for ice cream to go with the Peanut Butter Stout, I began to realize that beer is not just beer. Belching Beaver provides a true beer experience. Happiness, indeed, Dave. Even now, as I’m writing just steps away from the Pacific Ocean, I can still feel the desire to drive just a few miles inland, friends and pets in tow, to share the welcome I’ve received. Thank you Belching Beaver for not only enlightening my pallet but also expanding my vocabulary. Because of you and your passion to satisfy the beer-beginner and enthusiast alike, I can proudly announce I have a new favorite beer; your Hibiscus Wit. H-I-B-I-S-C-U-S W-I-T.
