Wild Barrel Brewing was founded in 2016 by 3 friends passionate about beer, Dr. Bill Sysak, Chris White & Bill Sobieski. Wild Barrel produces and delivers exceptional craft beers in a variety of styles, pleasing everyone from the novice to the most experienced beer aficionado. The brewery is known for its extensive barrel program, including annual releases of a variety of small-batch barrel-aged sours and barrel-aged imperial stout variations. The core line-up includes “San Diego Vice” sours implementing a variety of fruit additions, a constantly rotating selection of San Diego and Nor’easter style IPAs for the most extreme lupo-maniacs, coffee stouts featuring local roasters of different regions, and a “crushable” Belgian Wit.
CEO & Co-Founder, “Dr.” Bill has always been ahead of the curve on great beer and didn’t earn his nickname through his near-doctorate level of real-life beer scholarship. He earned it as a medic in the Army National Guard. Somehow, the moniker stuck, and Bill has remained “Dr.” Bill even after he left the military for a career in the medical field; his nickname became so ingrained that even the actual doctors at work referred to him as “Dr.” Bill. He is master of zymurgical knowledge and general beer wizardry. As a Certified Cicerone and a collector of rare beers, he is undeniably one of the most knowledgeable craft beer experts in the industry.
