Fresh Upgrades to Rubio’s Coastal Grill Menu and Design

Rubio’s has been the place to go in Southern California for fresh fish tacos since 1983. Ralph Rubio has made many changes to the restaurant and menu over the years, but now, this fast casual restaurant has some new upgrades to the menu as well as the design of the restaurant itself to entice a new generation of taco lovers to enjoy a great meal in a comfortable dining room which feels warm and inviting with its warm colors and fun decor.

Fresh Salads

If you’ve never ordered a salad from Rubio’s, I highly suggest you order the Chipotle Orange Salad with your choice of protein added to top it off. It definitely comes with a little kick as far as spice is concerned since the fresno chiles mixed with the chipotle orange vinaigrette add a little heat. Choose from Pan-Seared Shrimp, Regal Springs Tilapia, Pacific Mahi Mahi, or Grilled Chicken to make this salad a complete meal.

Having it prepared by Mr. Ralph Rubio himself is always an added bonus. He was at the Carlsbad location last night sharing the upgraded menu and his passion for fresh foods and culinary delights was evident in the ingredients, sauces and combinations of flavors that are put into each menu item.

Fish Tacos

The two fresh tacos added to the Coastal Grill menu are equally amazing. The Blackened Regal Springs Taco comes with tilapia, house blackened on an authentic comal, topped with creamy chipotle sauce, salsa fresca and Serrano slaw. It’s served on a warm stone-ground corn torilla with a slice of lime.

Another new taco added to Rubio’s Coastal Grill menu is my new favorite. It’s the Salsa Verde Shrimp Taco complete with tomatillos, poblano chilies and fresh herbs, along with butter Hass Avocado slices, a melted three-cheese blend and creamy chipotle sauce with a cilantro/onion mix and cabbage. This one is served on a flour tortilla. I would definitely suggest ordering two of these because you will want more of this flavor after tasting the first.

I’ve never ordered dessert from Rubio’s – I don’t think churros count because those are just a necessity – but they’re also upgrading the brownie found on their menu starting at the end of  February / early March so prepare yourselves and make sure you save room for this delight.

Sangria

Of course, no Mexican meal is complete without your favorite Craft Beer or Sangria, which is why Rubio’s is a great place to go for a fast casual dining experience with your favorite beverage to accompany the meal. Their Sangria, imported from Spain is a great pairing with any of the fresh fish tacos you add to your plate.

Dessert Menu

The Chocolate Caramel Ganache Brownie will have chocolate lovers stopping in just for this special treat, I promise. It’s just as decadent as it sounds.

North County Locations

Luckily, there are over two dozen Rubio’s locations in our area, including Carlsbad, Del Mar, Encinitas, Escondido, Oceanside, Poway, Ramona, Rancho Bernardo, San Marcos, Scripps Ranch, Solana Beach, and Vista. The upgraded restaurant design and decor is hitting the area restaurants in the coming months but these new tacos can be found already on their menu with the brownie coming later this month.
