The Ice Cream Sandwich Craze Is Headed to North County

The Baked Bear: La Costa and Carmel Valley

Have a sweet tooth? You’re in luck. The Baked Bear, San Diego’s favorite artisan cookie and ice cream sandwich parlor, just announced the opening of two new stores: La Costa and Carmel Valley. As you can see, this isn’t your average ice cream sandwich. We’re talking freshly-baked, homemade cookies (or waffles, or donuts) paired with premium ice cream.

The idea struck two childhood friends, Rob Robbins and Shane Stranger, over Thanksgiving 2012. They had always wanted to open up a restaurant together and believed a build-your-own ice cream sandwich concept would allow them to fulfill their dream. Experimentation began and The Baked Bear’s Pacific Beach location opened in May 2013. So many people came to check the new dessert place out that there with a line snaking down the street. The treats remained so popular that just three months later, they were invited to open up a location inside PETCO Park.

Going into the food business is a tradition that runs in the Robbins family, as Rob’s father, Barry Robbins, founded Chicago’s Brother Pizza nearly 40 years ago in Pacific Beach with his own childhood cohort. The team went on to open Milton’s Deli which has been a staple restaurant in San Diego for nearly 20 years.

But an expansion into North County is a natural next step for The Baked Bear. Here’s the scoop for La Costa and Carmel Valley dessert lovers.

“Both locations will offer our current menu: made-to-order combinations of baked in-house cookies, waffles, brownies and donuts with craft ice cream, hot fudge sundaes and our specialty item, the Bear Bowl, which is a warm chocolate chip cookie pie with a scoop of ice cream on top,” said Robbins. He adds, “The newest addition to the process is hot-pressing your ice cream sandwich; warming the cookies on the outside, while leaving the ice cream cool in the middle.”

You heard that right. Here’s how it works:

  1. Choose your bottom and your top. Yes, you can mix and match cookies, if you like!
  2. Choose your ice cream.
  3. Choose a topping.
  4. Have your creation hot-pressed, if you like.

The La Costa Grand Opening Will Have FREE Ice Cream!

  • The Baked Bear’s La Costa location will celebrate its grand opening on Saturday, February 7. From 12:00 p.m. – 4:00 p.m., every guest in attendance will receive a FREE ice cream sandwich!
